Hot and Fast Spare Ribs: A Walkthrough

Once the ribs have cooked for around 2 hours, it's time to wrap them. Lay down a piece of foil and add a layer of sauce, if desired. Jonathan used Blues Hog Tennessee Red sauce, but you can use any sauce you like. Wrap the ribs tightly and place them back on the smoker for another 30 minutes.
Step 6: Rest and serve
When the ribs are done, take them off the smoker and let them rest for at least 15-20 minutes before serving. This will allow the juices to redistribute and make the ribs even more tender. Cut the ribs into individual servings, and enjoy!
